Last wednesday I spent the entire day with my little sister Lilie. We woke up early, went out to find her halloween costume (and mine!) and came back home for a little cooking session. She was such an amazing helper and I'm giving her credit for these super-yummy blueberry muffins... way too good with the blue sugar icing :)

1 3/4 cup all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup melted butter
1 egg, lightly beaten
1 cup frozen blueberries
Sugar frosting : 1/2 cup powder sugar - 1 tsp melted butter - 1/2 tsp vanilla extract - food coloring - milk
Preheat oven at 375°F. Prepare a muffin pan with paper baking cups.
In a bowl, combine dry ingredients and frozen blueberries. In another bowl, mix together milk, egg and melted butter. Stir this mixture into the dry ingredients until just incorporated.
Fill the muffins cups and bake in the oven for approximately 20 minutes or until the muffins are golden brown. Set on a wire rack to cool.
For those with a sweet tooth : in a small bowl, combine powder sugar, melted butter and vanilla extract. Add milk if necessary to get a creamy icing. Add food coloring and it's done!

ReplyDelete(La dernière fois, j'avais décidé d'essayer ta recette de tarte à la citrouille à la place! Elle était très bonne aussi, mais Louis-Justin a eu très mal au ventre à cause des oeufs... J'avais oublié de les substituer par autre chose, ce que je fais habituellement... Oups!)
